Our Story
A little corner of Trieste in Galway
Trieste opened its doors on Valentine's Day 2020, born from Kate and Barry's shared passion for artisan food, carefully chosen wines and creating a place where people genuinely enjoy spending time together.
The name comes from the beautiful port city of Trieste in north-east Italy, a place where cultures, flavours and traditions come together. That same spirit inspired our little wine bar in the heart of Galway.
From the very beginning, our vision was simple: to create a warm, welcoming space where good food and good company take centre stage. Somewhere to linger over a glass of wine, share a beautifully prepared cheese or charcuterie board, celebrate special occasions or simply enjoy an unhurried evening with friends.
Every cheese, cured meat and bottle of wine on our shelves has been chosen with care. We love discovering exceptional producers, supporting local Irish suppliers wherever we can, and bringing together the very best flavours from Ireland and across Europe. Whether it's a familiar favourite or something you've never tasted before, we're always delighted to help you discover something new.
Over the years, Trieste has grown beyond our café. Our much-loved Trieste Boxes have become part of celebrations, birthdays, anniversaries, Christmas tables and quiet evenings at home, allowing customers to bring a little of the Trieste experience with them wherever they are.
Although our menus change with the seasons, our philosophy remains the same. We believe the best moments are often the simplest: a table shared with family or friends, artisan food made to be enjoyed together, a carefully poured glass of wine and the time to savour it all.
